Recipe: Quickie Chicken Quiche (Get Over It)

It’s way too easy to make tired, lame “…real men don’t eat quiche…” jokes when you’re looking at such a recipe. But, we should all get over it. Quiche is good. If you eat casseroles, bread, etc., you’re pretty much in the realm anyway.

So, let’s all move on and try this quick chicken-themed recipe.

Quickie Chicken Quiche

Recipe: Recipe: Slow Cooker Comfort Food

Ingredients

  • 4 boneless, skinless chicken breasts, cut into 1 inch pieces
  • 1 3/4 cups water
  • 1 box Uncle Ben’s Country Inn chicken and vegetable rice
  • 1/2 bag frozen mixed vegetables or I can mixed vegetables
  • 1 9 inch deep dish ready to use frozen pie crust
  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup shredded Monterey Jack cheese

Preparation:

  1. Heat oven to 400 degrees.
  2. In large skillet combine chicken, water, rice, contents of seasoning packet and frozen or canned vegetables.
  3. Bring to a boil. Cover, reduce heat and simmer for 10 minutes.
  4. Spoon mixture into pie crust.
  5. In small bowl, beat eggs and milk. Pour over rice mixture in pie crust; top with cheese.
  6. Bake 30-35 minutes or until knife comes out clean.
