As April draws to a close and Spring is now fully underway, Mother’s Day is just around the corner. At such a time, there’s no shame in missing Mom and her home cooking.
Fortunately, these simple homemade soup recipes can allow you to eat like you’re still living in Mom’s basement. If you are actually still living in your Mom’s basement, these won’t be as big a deal — but they’ll still taste good.
Main Dish Italiano Soup
Ingredients:
- 1/2 pound of ground beef
- 1/2 cup chopped yellow onion
- 1/2 tsp crushed oregano leaves
- 2 tbsp of olive oil. 2 cups chopped cabbage
- 1 medium clove garlic, minced
- 1 can bean with bacon soup
- 1 can minestrone soup
- 2 cans water
- 1 can Great Northern Beans
- Salt and pepper to taste
- Grated Parmesan cheese.
Preparation: Shape ground beef into 18 meatballs. In large fry pan, brown meatballs, garlic and onion in olive oil until meatballs are brown and onion and garlic are tender. Add cabbage. Cook until tender. Add soups, water, beans and seasonings. Heat through, stirring occasionally. Serve with Parmesan cheese to taste.
Chinese Main Dish Soup
Ingredients
- 2 cups diced chicken
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/2 cup sliced water chestnuts
- Medium clove garlic, diced
- 1 pkg. frozen snow peas
- 1/2 tsp ground ginger
- 2 tbsp.2 tbsp Olive oil
- 2 cans chicken rice soup
- 1 can water
- 1 tbsp soy sauce
Preparation: In a large sauce pan, cook celery and onion in the butter. Add garlic and ginger. Cook until vegetables are tender. Add remaining ingredients. Cool over low heat for five minutes or until done.
Beef and Dumpling Main Dish Soup
Ingredients
- 1 pound beef stew meat cooked until tender
- 1 4 oz can mushrooms
- 1 cup celery
- 2 tbsp olive oil
- 1 can Campbell’s Beef Soup
- 1 can Old Fashioned Vegetable Soup
- 1 can water
- 1 cup Bisquick
- 1/3 cup milk
- 1 tbsp parsley
- 1/8 tsp thyme
Preparation: In large sauce pan, cook celery and mushrooms in olive oil until tender. Add soups, water and beef. Bring to low boil. Combine Bisquick, milk, parsley and thyme. Drop mix in spoonfuls into boiling soup. Reduce heat. Cook uncovered over low heat for 10 minutes. Cover. Cook 10 more minutes. Serve.
