Summer Grilling Guy’d Video – Episode 3: Chicken

Our Summer Grilling Guy'd marches forward through Memorial Day with another video building block in your castle of grilling mastery.

We've already tackled steak and salmon. Now, we're moving on to another staple of the sacred backyard flame, chicken. It's healthy, cheaper than beef and, like so much else, tastes like chicken.

Chef David Coleman of Chianina Steakhouse in Long Beach, California joins us this week sharing an elaborate recipe for grilled chicken and all necessary trimmings. If you want to play along at home, be prepared. You're going to need a more significant assembled pile of goodies to pull off this grilling test. Then again, if that scares you off, you wouldn't just taste like chicken, you'd be one.

BBQ Chicken Ingredients:

  • 1 Mary's Chicken from Whole Foods
  • 1 Bunch of asparagus
  • Olive Oil
  • White Balsamic Vinegar

Cucumber Potato Salad Ingredients:

  • Blanched New Potatoes
  • Celery Hearts
  • Red Onion
  • Cucumber
  • Red Wine
  • Vinegar
  • Olive Oil
  • Salt
  • Pepper

Dry Rub Ingredients:

  • Paprika
  • Cayenne Pepper
  • Powder Garlic Powder
  • Ground Star Anise Mustard Powder
  • Ground Clove
  • Allspice
  • Sugar
  • Kosher Salt
  • Ground Black Pepper

Sauce Ingredients:

  • Molasses
  • Brown Sugar
  • Apple Cider
  • Vinegar
  • Tomato Paste
  • Worchester Sauce
  • Marsala Calabrian Chile Paste

Tools:

  • Tongs
  • 2 small bowls
  • Brush
  • 2 plates
  • Grill
  • Charcoal
  • Pre-soaked wood chips
  • Calibrated Thermometer

And, of course a beer. Coleman suggest a Saison Dupont – because chefs do that kind of thing.
