Nothing can impress a date more than cooking, and you can amp up said impression by pulling off an international dish.
This Asian-themed soup accomplishes both. Most importantly, it needs simple ingredients and is easy to prepare.
One Pot Beef and Noodle Broth
Ingredients
- 2 tsp olive oil
- 1 lb. flank steak sliced thin (Put beef in freezer for about 20 minutes before slicing. Cut beef against the grain.)
- 4 cups Bok Choy chopped
- 4 cups chicken stock
- Low salt, if desired.
- 1 cup water
- 4 oz wide rice noodles
- 2 tsp soy sauce
- 1 1/2 cup Mung bean sprouts
- 4 tbsp chopped Basil

Preparation: Heat oil in oven. Add beef and cook for 2 minutes.
Transfer beef to plate. Add Bok Choy to pot and cook 2 minutes. Add broth and water, cover and bring to boil.
Add noodles and soy and lower heat to simmer. Cook until noodles are soft or about 4 minutes. Return beef to pot, cook until heated through or 1-2 minutes.
Ladle to bowls and top with sprouts and basil.
