This fried chicken recipe wears the “30 Cracker” name because of its ingredients — not because it’s full of post Fourth of July fireworks or because it’s prepared by 30 high school dropouts from Mississippi.

Ingredients
- 30 saltines
- 2 tbsp flour
- 2 tbsp dry potato flaked
- 1 tsp seasoning salt
- 1/2 tsp pepper
- 1egg 1/2 cup oil
- 6 boneless, skinless chicken breasts
Preparation: Put crackers in large zip lock bag. Seal bag and crush crackers to fine crumbs. Add flour, potato flakes, seasoned salt and pepper. Shake to mix.
Beat egg in shallow bowl.
Heat oil in large skillet on medium high heat.
Dredge chicken in egg and then place in bag with crumbs, seal and shake to coat. Do each piece of chicken separately.
Reduce heat to medium and cook chicken for 15-20 minutes, turning frequently until golden brown and juices run clear.
